Cranberry Nut Bread
Makes 1 loaf (12 slices)

In addition to dried cranberries and chopped walnuts, orange juice and zest flavor this fruit-filled holiday bread.

Ingredients
- 3/4 cup (1 1/2 sticks) butter, softened
- 1/2 cup honey
- 2 eggs, lightly beaten
- 1/2 cup orange juice
- 1 teaspoon orange zest
- 1 1/2 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 3/4 cup chopped dried cranberries
- 1/2 cup chopped walnuts
Method
Preheat the oven to 350°F.
Cream butter and honey together in a large bowl.
Stir in eggs, orange juice and orange zest; set aside.
In a separate bowl, whisk together flour, baking powder and salt and add to honey mixture in thirds, beating after each addition.
Stir in cranberries and walnuts, then transfer batter to an oiled loaf pan.
Bake for 50 to 60 minutes, or until cooked through.
