Stored well, this cranberry sauce will keep for 2 weeks in the refrigerator. So make it ahead and keep it on hand to add sweet-tart flavor to roasted meats and sandwiches when you're in a hurry.
- 2 cups cranberries
- 1/2 cup apple juice
- 1/2 cup honey or rice syrup
- 1 teaspoon orange zest
- 1/2 cup walnuts or pecans
Combine cranberries, apple juice, and honey in a saucepan over medium heat, and simmer until berries pop, about 5 minutes.
Remove from heat and stir in orange zest and walnuts.
Cool to room temperature and then refrigerate in a covered container.
Per serving: About 1/2 cup, 180 calories (60 from fat), 6g total fat, 0g saturated fat, 0mg cholesterol, 0mg sodium, 31g carbohydrates (3g dietary fiber, 27g sugar), 3g protein.
