Curried Chicken with Mango

Sweet and spicy are an ideal combination in this flavorful main course. Serve over rice with steamed veggies on the side for a complete meal.
Ingredients
  • 8 ounces nonfat plain yogurt
  • 1 teaspoon New Mexican chile powder
  • 1 teaspoon mild or hot curry powder
  • 3/4 teaspoon lime juice
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon fine sea salt
  • 4 boneless, skinless chicken breasts halves
  • 1 large ripe mango, finely diced

Method

Combine 1/4 cup of the yogurt, chile powder, curry powder, 1/4 teaspoon of the lime juice, garlic and salt in a wide, shallow baking dish.

Add chicken, turn to coat, cover and refrigerate for at least 1 hour.

Preheat the oven to 375°F. Put remaining yogurt, two-thirds of the mango and remaining 1/2 teaspoon lime juice into a blender; puree until smooth to make a sauce, then set aside.

Bake chicken until just cooked through, about 25 minutes.

Transfer to plates, top with some of the yogurt sauce and garnish with remaining mango. Serve extra sauce on the side.
