These simple rollups make for an easy snack or lunch. Use orange, yellow or green bell peppers instead of red, if you like.
- 1/2 cup crumbled blue cheese
- 4 slices red bell pepper
- 4 slices deli roast beef
Roll two tablespoons of cheese and 1 slice of pepper in each slice of roast beef. Cut in half before serving.
Per serving: 1 roll, 90 calories (50 from fat), 5g total fat, 3.5g saturated fat, 25mg cholesterol, 450mg sodium, 2g carbohydrates (0g dietary fiber, 0g sugar), 9g protein.
