The key to these juicy honeydew and watermelon pops is to use lots of fresh mint, which lends fragrance and flavor to the frozen treats.
- 2 cups small honeydew chunks
- 2 cups small seedless watermelon chunks
- 1/4 cup packed fresh mint leaves
- 1 tablespoon honey
Combine honeydew, watermelon, mint and honey in a blender and blend until smooth. Pour mixture into ice-pop molds, insert sticks and freeze until solid, at least 8 hours or up to overnight. To serve, run warm water over the molds to loosen, then gently pull out pops.
