Dried Fig, Brie and Rosemary Bites

These flavorful bites are a wonderful addition to a plate of sliced prosciutto or as part of an antipasto platter. If you're pressed for time, simply serve this appetizer at room temperature instead of baking them.

Ingredients
- 8 large dried figs, soaked in hot water for 5 to 10 minutes and drained
- 2 ounces Brie, cut into small pieces
- 2 teaspoons extra-virgin olive oil
- 1 tablespoon fresh rosemary
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
Preheat the oven to 350°F.
Trim stems and make a slit in the side of each fig.
Push a piece of Brie into each fig.
Place in an 8-inch-square baking dish and toss gently with rosemary, oil, salt and pepper.
Bake until just warm and cheese melts, about 8 minutes.
