Family Night Chicken with Winter Squash

With the arrival of autumn, this delicious, yet simple, chicken dish provides an ideal use for one fall favorite — winter squash. The underlying sweetness in butternut squash is enhanced by cooking along with apple juice, slightly tangy paprika and savory roasted garlic.

Ingredients
- Olive oil cooking spray
- 4 cups diced butternut squash
- 1 cup apple juice
- 1 teaspoon dried thyme, divided
- 4 cloves garlic, finely chopped
- 1/2 teaspoon fine sea salt, divided
- 1/4 cup tomato paste
- 2 teaspoons paprika
- 1 pound skinless chicken drumsticks
- 1 pound skinless chicken thighs
- 1/4 teaspoon ground black pepper
Method
Preheat the oven to 400°F.
Spray a 9x13-inch baking pan with cooking spray.
Add squash, apple juice, 1/2 teaspoon of the thyme, garlic, and 1/4 teaspoon salt and pepper to pan and toss gently to combine. Set aside.
In a small bowl, stir together tomato paste, paprika, remaining 1/2 teaspoon thyme and remaining 1/4 teaspoon salt.
Rub chicken drumsticks and thighs all over with tomato paste mixture, then arrange on top of squash in a single layer.
Cover with foil and bake for 30 minutes.
Remove foil and continue baking for an additional 20 minutes.
