Festive Rice

Serve this bright rice dish with a platter of tacos or fajitas and a side of black beans sprinkled with cheese.
Ingredients
  • 2 cups short grain rice
  • 3/4 teaspoon fine sea salt
  • grated nutmeg
  • 1 dried bay leaf
  • 1/4 cup sunflower seeds
  • 2 pounds fresh spinach (can substitute a 10-ounce package frozen chopped spinach, thawed)
  • 1 red bell pepper, chopped

Method

Combine rice, 3 cups water, salt, nutmeg, bay leaf, sunflower seeds and bell pepper in a large saucepan.

Bring to a boil, reduce heat, cover, and simmer 30 minutes.

Do not remove lid.

After cooking, remove from heat and allow to steam, covered, for 15 minutes.

While rice is cooking, wash spinach and place in a saucepan.

Cook over moderate heat until spinach wilts, about 5 minutes.

Remove and finely chop. Set aside.

Add cooked spinach to the rice and stir to combine.
