When it comes to party foods, nothing can top the classic combination of figs and cheese. With just a little time and attention, this canapé brings those flavors to a new level, with the added richness of caramelized honey and the fresh flavor of added herbs. A fried sage leaves adds a tough of elegence to your presentation, but you can omit it, if you're short on time.

Ingredients

    1/4 cupextra-virgin olive oil
    8fresh sage leaves
    12 largefresh figs
    1 tablespoonhoney
    1 tablespoonsoy sauce
    4thin slices prosciutto, halved
    4 tablespoons(2 ounces) soft herbed cheese, such as Boursin or fresh goat cheese

Method

Preheat the broiler.


Heat oil in small skillet over high heat.


When very hot, fry sage leaves until just crisp, about 45 seconds.


Drain on paper towels and set aside.


Half each fig lengthwise and cut a dime-size slice off the bottom of each so that they sit level.


Place on a foil-lined baking sheet.


Whisk together honey and soy sauce and brush tops of figs generously with it.


Broil figs until browned and bubbling on top, about 3 minutes.


Top 8 fig halves with half a slice of prosciutto each, top 8 with a dollop of cheese, and top remaining figs with sage leaves.


Serve warm or at room temperature.
