Garlic and Herb Mashed Potatoes

Consider these traditional mashed potatoes with a little kick. Serve them with a green salad alongside a steak or burger, or add to your holiday line-up.
Ingredients
  • 2 pounds Yukon gold or red potatoes, cut into chunks
  • 4 cloves garlic
  • 1 thick slice of onion
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • 1 cup whole milk or half-and-half, warmed
  • 4 tablespoons extra-virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 1 tablespoon chopped fresh flat-leaf parsley or fresh chives

Method

In a large saucepan, cover potatoes, garlic cloves, onion slice, bay leaf and thyme sprigs with water and simmer over medium heat until potatoes are fork-tender, about 20 minutes. 

Drain thoroughly and return to pan, discarding onion, bay leaf and thyme sprigs.

Set the pan over medium heat and add milk or half-and-half and olive oil. 

Mash with a potato masher or large fork, adding additional milk if needed to reach desired consistency. 

Season to taste with salt. 

Transfer to a serving dish and garnish with parsley or chives.
