Ginger-Spiced Roasted Chicken

Here's a tasty Indian-style twist on herb-roasted chicken. With a mix of fresh and dried herbs and spices, this chicken is well-seasoned but mild enough for the whole family to enjoy. Serve with a big green salad for an easy dinner.

Ingredients
- 1 tablespoon grated fresh ginger
- 1 teaspoon caraway seeds
- 1/2 teaspoon garam masala
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon coriander seeds, crushed
- 1/4 teaspoon ground turmeric
- 2 cloves garlic, finely chopped
- 1 (4- to 5-pound) whole chicken, cut into 6 to 8 pieces
- 1/2 lemon, plus extra lemon for serving
- 1 tablespoon ghee or butter, melted
Method
Preheat the oven to 375°F.
Put ginger, caraway, garam masala, salt, coriander, cayenne, turmeric and garlic into a small bowl and stir well to combine.
Arrange chicken in a lightly oiled baking pan and season all over with spice mixture.
Squeeze lemon over chicken.
Drizzle chicken with ghee.
Bake, basting a few times, until chicken is cooked through and juices run clear, 1 to 1 hour and 15 minutes. Serve immediately.
