Gorgonzola and Dried Cherry Salad

This simple combination of leafy green lettuce, sweet red onion, sliced apples, roasted pecans and dried cherries tossed in raspberry vinaigrette can serve as a main lunch entrée or on the side in a more extravagant meal.

Ingredients
- 1/4 cup extra-virgin olive oil
- 2 tablespoons raspberry vinegar
- 1 clove garlic, finely chopped
- 1/8 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- 1/2 cup toasted pecans
- 1/4 cup dried cherries
- 1 head leafy green lettuce, torn into bite-size pieces
- 1 Granny Smith apple, peeled and thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled Gorgonzola cheese
Method
Whisk together oil, vinegar, garlic, salt and pepper in a small bowl to make a dressing.
Toss pecans, cherries, lettuce, apples and onions together in a large salad bowl.
Top with dressing and toss gently to coat. Garnish with cheese and serve.
