Grated Vegetable Slaw

Delicate strands of speckled green zucchini and bright orange carrots combine with shredded purple and green cabbage in this brilliantly colored salad. The flavors of the vegetables shine as the light lemon-Dijon mustard vinaigrette brings them to the forefront.
Ingredients
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded red cabbage
  • 1 cup shredded savoy cabbage
  • 3 carrots, grated
  • 3 green onions, chopped
  • 3 radishes, thinly sliced (optional)
  • 1 small zucchini, grated

Method

Whisk together oil, lemon juice, mustard, salt and pepper in a large bowl. 

Add cabbage, carrots, green onions, radishes, and zucchini and toss gently to coat. Serve immediately.
