Greek Chicken Salad

Ingredients

    3/4 cuplowfat plain yogurt
    1/2 cupmayonnaise
    1 teaspoonchopped fresh oregano
    3 clovesgarlic, finely chopped
    3 cupsshredded cooked chicken breast
    1 mediumcucumber, seeded and diced
    3/4 cupcherry tomatoes, halved
    1/2 cupcrumbled feta
    1/4 cupchopped fresh flat-leaf parsley
    6 tablespoonsKalamata olives, pitted and roughly chopped

Method

In a large bowl, combine yogurt, mayonnaise, oregano and garlic. 


Mix well until creamy. 


Add chicken, cucumber, tomato, feta, parsley and olives. Toss well. 


Chill for 30 to 60 minutes before serving. 


Serve as is, on a bed of greens, or in sandwiches.
