Grilled Halibut Salad

Mediterranean seasonings spice up the halibut, a firm, mild-flavored fish perfect for grilling. Mild romaine hearts blend with bitter radicchio for the salad greens, and honey, mustard and lime add a sweet, refreshing zest to the dressing. Warm olive or semolina bread makes a lovely accompaniment to this light dish.

Ingredients

    Salad
    1/4 cupextra-virgin olive oil
    1/4 cuplime juice
    2 tablespoonshoney
    1/2 teaspoondry mustard
    1/2 teaspoonfine sea salt
    cayenne pepper
    1red bell pepper, chopped
    1 cupthinly sliced radicchio, (from about 1/4 medium head)
    1 package (12-ounce)romaine hearts, torn into bite-size pieces
    Halibut
    2 poundsskinless halibut steaks
    1 teaspoonextra-virgin olive oil
    Mediterranean seafood seasoning

Method

For the salad, whisk together oil, lime juice, honey, mustard, salt, and cayenne in a small bowl to make a dressing. Set aside. 


Toss together red bell pepper, radicchio, and romaine in a large serving bowl and set aside.


For the halibut, prepare a grill for medium-heat cooking. 


Brush both sides of each steak with oil and sprinkle with seafood seasoning. 


Grill, flipping once, until fish is just cooked through. (A good rule of thumb is about 10 minutes per inch of thickness.) 


When fish is almost done, toss salad with dressing. 


Arrange large chunks of grilled fish decoratively over salad and serve.
