Grilled Mediterranean Spiced Potato Halves

Paprika, garlic and dried herbs lend color and great flavor to these potatoes. Roast the potatoes in the oven, then finish cooking them on the grill for a smoky flavor. Serve alongside lamb burgers for a complete meal.

Ingredients

    4 mediumunpeeled white potatoes, washed and scrubbed
    2 tablespoonsextra-virgin olive oil, plus more for oiling the pan
    2 clovesgarlic, finely chopped
    1/2 teaspoonfine sea salt
    1/4 teaspoonground black pepper
    1/4 teaspoonpaprika
    1 teaspoondried basil
    1/2 teaspoondried oregano
    Freshly grated Parmigiano Reggiano

Method

Preheat the oven to 425°F.


Cut potatoes in half lengthwise and place them in a large mixing bowl.


Add olive oil, garlic, salt, pepper, paprika, basil and oregano.


Toss to coat well.


Place potato halves cut side down in a single layer in a lightly oiled shallow roasting pan.


Leave some spiced oil in the bowl for basting later.


Bake until tender, about 30 minutes.


While potatoes are baking, light the grill.


When potatoes are tender, transfer them to the hot grill, still cut side down.


Cover and grill until potatoes are browned, about 5 minutes.


Turn potatoes and top with remaining oil from bowl.


Cover and grill another 5 minutes or until potatoes are very tender and aromatic.


Transfer potatoes to a serving platter, sprinkle with Parmigiano Reggiano and serve.
