Grilled Mushrooms with Artichoke Hearts

Hearty mushrooms caps are stuffed with marinated artichoke hearts and grilled until tender and juicy. An assortment of grilled appetizers starts your celebration with a tasty bang.

Ingredients

    1 can (14-ounce)artichoke hearts, drained and halved
    1/4 cupextra-virgin olive oil
    1/4 cuprice vinegar
    1/2 teaspoonfine sea salt
    1/2 teaspoonground black pepper
    18 largebutton mushrooms, stems removed

Method

Marinate artichoke hearts in oil, vinegar, salt and pepper for 30 minutes, or overnight.


Preheat grill to medium. 


Stuff each mushroom cap with artichoke hearts; reserve remaining marinade. 


Brush mushrooms with some of the marinade and arrange on the grill, stuffed side up. 


Grill, basting with more marinade from time to time, until tender and hot throughout, 8 to 10 minutes. 


Transfer to a platter and serve.
