Grilled Peaches with Arugula

Juicy summer peaches on the grill seem like the ultimate way to celebrate grilling season — and tossing them with arugula makes a seasonal salad perfect for any backyard grilling session. The peaches could also be chopped and served over goat cheese–topped crostini for a refreshing appetizer.
Ingredients
  • 6 peaches, halved and pitted
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup local honey
  • 4 cups baby arugula
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon flaky sea salt (like Maldon)
  • 1/4 teaspoon ground black pepper

Method

Prepare a grill for medium heat cooking.

Arrange peaches on a baking sheet or platter, sprinkle all over with lemon juice and lemon zest, then drizzle with honey.

Arrange peaches on grill and cook, turning once, until grill marks form and the fruit is softened, but still firm, about 4 to 6 minutes on each side.

Transfer peaches to a serving platter and garnish with arugula, olive oil, salt and pepper.
