Grilled Veggie Burgers with Baked Beans

This recipe makes a complete meal, including tasty veggie burgers with all of the fixings, grilled squash and baked beans.

Ingredients

    2 largeVidalia onions, cut into wedges
    2 largesummer squash, thickly sliced
    2 tablespoonsextra-virgin olive oil
    1 tablespoonchopped herbs (such as basil, tarragon, parsley or rosemary)
    1/4 teaspoonfine sea salt
    1 can (15-ounce)baked beans
    4veggie burgers, defrosted, if frozen
    4whole grain hamburger buns
    Ketchup
    Yellow mustard
    Sweet relish
    Lettuce leaves
    Sliced tomatoes
    1/4 teaspoonground black pepper

Method

Prepare a grill for medium heat cooking. 


Lightly toss onions and squash with olive oil, herbs, salt and pepper in a large bowl, then transfer to the grill and cook until just tender, turning once, about 8 minutes; transfer to a plate. 


Grill veggie burgers until heated through and buns until just toasted. 


Meanwhile, heat baked beans in a small pot over medium heat until heated through. 


Serve veggie burgers on toasted buns, topped with ketchup, mustard, relish, lettuce and tomatoes. 


Serve grilled vegetables and baked beans on the side.
