Guacamole with Cilantro

Though toned down for young palates, this guacamole is still fragrant with fresh cilantro and lime juice.

Ingredients

    1ripe but firm medium avocado, peeled and pitted
    1 tablespoonlime juice
    1 teaspoonextra-virgin olive oil
    1 teaspoonfinely chopped fresh cilantro
    1/8 teaspoonground cumin

Method

In a small bowl, mash avocado with a fork until smooth.


Stir in lime juice, oil, cilantro and cumin and serve.


The guacamole will keep refrigerated in an airtight container for up to 3 days.
