Halibut Steaks with Tomato Bread Stuffing

Have one of our seafood team members pick out halibut steaks of similar weight and shape so that they can be arranged on top of each other easily. If you'd like, a little dollop of lemon mayonnaise on top of each cooked halibut steak would be a nice addition.

Ingredients

    2 cupsfresh bread crumbs
    2 smallRoma tomatoes, chopped (about 2/3 cup)
    4 1/2 tablespoonsunsalted butter or extra-virgin olive oil, melted
    1/4 smallyellow onion, finely chopped
    2 tablespoonsfinely chopped parsley
    1 teaspoonpoultry seasoning
    6(6- to 8-ounce) halibut steaks
    1/2 teaspoonfine sea salt
    Lemon slices
    Paprika
    1/4 teaspoonground black pepper

Method

Put bread crumbs, tomatoes, melted butter, onion, parsley, and poultry seasoning into a medium bowl and stir well to make a stuffing. 


Preheat the oven to 350°F. 


Oil a baking pan and arrange three steaks inside. 


Sprinkle salt and pepper liberally all over, then top each equally with stuffing. 


Cover each with a second steak and drizzle with remaining 1 1/2 tablespoons butter. 


Pour 1/3 cup boiling water into pan around the fillets and bake for 30 to 35 minutes, until halibut is flaky when poked with a fork. 


Garnish halibut with lemon slices and dust with paprika.
