Hearts of Palm and Piquillo Pepper Salad with Walnut Oil Vinaigrette

A superb salad is all about uniting the right ingredients. Here we toss sweet-spicy piquillo peppers, hearts of palm, arugula and Manchego cheese with a rich walnut oil vinaigrette. For a dairy-free version, simply omit the cheese.

Ingredients

    <b>Vinaigrette</b>
    1/2 teaspoonDijon mustard
    1 clovegarlic, finely chopped
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper
    1 tablespoonsherry vinegar
    1 tablespoonextra-virgin olive oil
    2 tablespoonswalnut oil
    <b>Salad</b>
    1 cupchopped hearts of palm
    1/2 cuppiquillo peppers, drained, rinsed and chopped
    1 mediumtomato, seeded and chopped
    2green onions, chopped
    4 cupsarugula or mild green such as baby spinach or watercress
    2 ouncesManchego cheese, shaved

Method

To prepare the vinaigrette, combine mustard, garlic, salt, pepper, vinegar, olive oil, and walnut oil in a small bowl and stir to combine.


In a large salad bowl, toss hearts of palm, peppers, tomato, onions and arugula together in a large bowl. 


Drizzle with vinaigrette and toss to combine. 


Top with Manchego and serve immediately.
