The fruity sweetness of onions lends themselves perfectly to this condiment, excellent on sandwiches and delicious with sharp cheese and roasted pork. Look for an assortment of heirloom onions in your store.

Ingredients

    2 largeheirloom or sweet onions (about 1 pound), thinly sliced
    1 cupdry red wine
    2 tablespoonshoney
    1 tablespoonred wine vinegar
    1/4 teaspooncrushed red chile flakes
    1 tablespoonplum or seedless berry preserves
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

In a medium skillet, combine onions and red wine and bring to a boil. 


Reduce to a simmer, cover and simmer until the onions are soft, about 30 minutes. 


Uncover skillet and add honey, vinegar and red pepper flakes. 


Simmer uncovered until most of the liquid has been absorbed, about 45 minutes. 


Stir in preserves and cook until onion mixture is thick and liquid has become a glaze, 3 to 5 minutes. 


Taste and adjust seasoning with salt and pepper. 


Let onion jam cool to room temperature, cover and refrigerate. 


Bring to room temperature before serving.
