Mint tea brings a cool, refreshing flavor to this dressing. Enjoy over salad greens, coleslaw or tomato and feta salad.

Ingredients

    1/2 cupsunflower oil
    1/2 cupextra-virgin olive oil
    1/3 cupwhite wine vinegar or apple cider vinegar
    1 tablespoonfinely chopped shallot
    2 teaspoonsloose leaf mint tea or 1 opened mint tea bag
    1 teaspoonDijon mustard
    1/2 teaspoonfine sea salt
    1/8 teaspoonblack pepper

Method

In a jar with a tight fitting lid, combine the oils, vinegar, shallot, tea, mustard, salt, and pepper. 


Cover tightly and shake the jar vigorously to combine. Refrigerate overnight before using.
