Herbal Mint Tea Salad Dressing
Makes about 1 1/3 cups dressing

Mint tea brings a cool, refreshing flavor to this dressing. Enjoy over salad greens, coleslaw or tomato and feta salad.

Ingredients
- 1/2 cup sunflower oil
- 1/2 cup extra-virgin olive oil
- 1/3 cup white wine vinegar or apple cider vinegar
- 1 tablespoon finely chopped shallot
- 2 teaspoons loose leaf mint tea or 1 opened mint tea bag
- 1 teaspoon Dijon mustard
- 1/2 teaspoon fine sea salt
- 1/8 teaspoon black pepper
Method
In a jar with a tight fitting lid, combine the oils, vinegar, shallot, tea, mustard, salt, and pepper.
Cover tightly and shake the jar vigorously to combine. Refrigerate overnight before using.
