Herbed Garlic Parmigiano Reggiano Popcorn

A simple topping of Parmigiano Reggiano and dried herbs is delicious on popcorn. Recipe courtesy of Sara Wells of ourbestbites.com.
Ingredients
  • 1 tablespoon unsalted butter
  • 1 tablespoon extra-virgin olive oil
  • 1 large clove garlic, pressed through a garlic press
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 8 cups plain popped popcorn (from 1 bag plain microwave popcorn)
  • 3/4 cup grated Parmigiano Reggiano cheese, plus more to taste

Method

Place butter, oil and garlic in a small saucepan over medium-low heat. 

Heat until butter melts and starts to lightly simmer. 

Cook, stirring frequently, for 1 to 2 minutes, until garlic is softened and fragrant. 

Add thyme and basil and stir to combine. 

Remove pan from heat and set aside.

Place prepared popcorn in a large mixing bowl. 

Drizzle butter mixture over popcorn while stirring with a large spoon or spatula. 

Quickly toss to coat. 

Add cheese and toss until well distributed. 

Top with additional cheese if desired and serve immediately.
