Herbed New Potatoes

Since this simple side dish is perfect with fish, burgers or barbeque, turn it into a standby favorite for weeknight meals. Use the herbs we recommend here, or try a combination of your favorites to match the season.

Ingredients
- 5 pounds red new potatoes, quartered
- 1/4 cup extra-virgin olive oil
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 tablespoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- 1 teaspoon fine sea salt
- 1/2 teaspoon ground black pepper
Method
Preheat the oven to 400° F.
In a large bowl, toss quartered potatoes with olive oil and herbs.
Place in a large roasting pan, drizzle with any remaining oil and sprinkle generously with sea salt and pepper.
Roast for 35 to 45 minutes, turning potatoes a few times so they brown evenly, until tender and golden.
