Homemade Ginger Ale
Make about 2 cups syrup (enough for 32 servings)

Make a pitcher of this refreshing ginger drink to add some sparkle to your outdoor summer parties.

Ingredients
- 1/4 cup diced fresh ginger
- 2 cups sugar
- Ice cubes for serving
- Sparkling water, chilled, for serving
Method
Combine ginger, 2 cups water and sugar in a medium saucepan.
Set over high heat and bring to a boil, stirring to dissolve sugar.
Reduce the heat to medium and simmer for about 10 minutes.
Let cool, then strain syrup through a fine-mesh strainer. Syrup will keep in an airtight container in the refrigerator for up to 1 week.
To serve, fill glasses with ice. Add 1 tablespoon ginger syrup to each glass and top with sparkling water.
Stir, then taste and add more syrup if desired.
