Homemade Hot Chocolate Mix

Makes about 2 cups (8 servings)

Spoon this hot chocolate mix into jars to give as gifts, or keep some on hand in your own pantry for chilly afternoons. For a burst of flavor, try steeping a bag of mint or almond tea in the mug along with the hot chocolate.
Ingredients
  • 1/2 cup sugar
  • 1 vanilla bean, cut into small pieces
  • 1 cup powdered milk
  • 1/4 cup unsweetened cocoa powder
  • Pinch of salt

Method

Put sugar and vanilla bean into a food processor and pulse until vanilla bean is very finely chopped and well incorporated.

Strain vanilla sugar through a fine sieve, discarding any large pieces of vanilla bean that remain; transfer to a large bowl.

Add milk, cocoa and salt to bowl with sugar, stir well and then transfer to an airtight container.

To make hot chocolate, put 1/4 cup of the mix and 1 cup boiling water into a mug and stir well.

To make a flavored hot chocolate mix, try one of the following:

Spiced Hot Chocolate Mix 
1 recipe hot chocolate mix (see above)
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg

Java-Style Hot Chocolate Mix
1 recipe hot chocolate mix (see above)
1 to 2 tablespoons instant coffee
