Honey Granola Cookies

These honey-sweetened cookies are made with lowfat granola and whole wheat pastry flour. They're a great addition to lunch boxes, or eat them with a tall glass of cold milk for dunking.

Ingredients
- 1/2 cup (1 stick) butter, softened
- 2/3 cup honey
- 1 egg
- 1 teaspoon pure vanilla extract
- 2 2/3 cups low-fat granola
- 1 1/2 cup whole wheat pastry flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
Method
Preheat oven to 350°F.
Cream butter, honey, egg and vanilla together in a large bowl.
Stir together granola, flour, baking powder and salt in a second bowl, then add to the bowl with the butter mixture and mix well.
Drop cookie dough by rounded tablespoons onto baking sheets lined with parchment paper.
Flatten down slightly with wet fingers or the back of a fork, then bake for 20 minutes. Cool on a rack and serve.
