Hot Pepper Green Beans

Fermented black beans, which are made from small black soybeans, have a powerful, salty flavor that's a perfect match for green beans. Other asian condiments like rice vinegar, mirin and tamari round out this bright, flavorful side dish.
Ingredients
  • 1 pound green beans
  • 4 cloves garlic
  • 1/2 cup chopped green onions
  • 2 fresh chiles (or crushed red chile flakes)
  • 1 tablespoon fermented black beans
  • 3 tablespoons rice vinegar
  • 2 tablespoons mirin
  • 2 tablespoons tamari
  • 1 1/2 tablespoon cornstarch
  • 1 tablespoon brown sugar
  • 3 tablespoons canola oil

Method

Blanch green beans for 2 minutes.

In a bowl combine garlic, green onions, chiles and black beans.

In another bowl combine vinegar, soy sauce, cornstarch, sugar and mirin.

Heat oil in wok; add garlic mixture and stir-fry 1 minute.

Add green beans and stir-fry about 5 minutes.

Add sauce mixture and coat beans. Serve at once.
