Method
Mash cheese and yogurt together in a small bowl until almost smooth then spread mixture onto one side of each slice of bread.
Top two of the slices with beef, Peppadew peppers and arugula, then arrange remaining bread on top to make sandwiches.
Melt butter in a large heavy skillet over medium-high heat.
Add sandwiches and cook, flipping once, until golden brown on both sides, 2 to 4 minutes total.
Transfer to plates and serve immediately.
