Italian-Style Meatloaf

This take on classic meatloaf uses pesto and sun-dried tomato sauce for flavor. Be sure to use a combination of beef and pork for the best result.
Ingredients
- 1 1/2 pound ground beef
- 1 egg
- 1/2 cup seasoned dry bread crumbs
- 2 tablespoons balsamic vinegar
- 1 1/2 cup pesto and sun-dried tomato pasta sauce, divided
- 1 cup shredded mozzarella cheese
- 1/2 pound ground pork
Method
Preheat the oven to 375°F.
In a medium bowl, combine ground meat, egg, bread crumbs, balsamic vinegar and 3/4 cup of the pasta sauce until completely mixed.
Form meat into a long loaf about 8 inches by 3 inches.
Place in an ovenproof casserole dish or deep baking pan.
Pour remaining sauce over top and sprinkle with mozzarella.
Bake 45-60 minutes until just cooked through.
Let rest for 10 minutes before slicing and serving.
