These Mediterranean tuna sandwiches can be made as little silver dollar sandwiches or in a large loaf sliced into 2-inch thick pieces. You may add a thin sliver of sharp provolone or mozzarella to each sandwich if you desire. You may make the tuna salad the day prior to assembling the sandwiches to save time.

Method
Combine tuna, onion, peppers, parsley, oregano, oil and vinegar in a large bowl. Top each roll with tuna. (Alternately, spread half of the French bread with tuna, then top with remaining half and cut into thick slices.)
Set sandwiches aside at room temperature for about 30 minutes before serving to allow flavors to mingle.
