Jasmine Tea Rice

Light, aromatic and very simple, this rice makes a great accompaniment to any stir-fry. Green tea replaces water for cooking the rice, a process that adds a delicate, floral flavor. Lightly toasting the rice in a dry pan brings out its nutty flavors.

Ingredients
- 1 cup Jasmine or Jasmati white rice
- 1 tablespoon green tea leaves or green tea leaves with roasted brown rice (Genmaicha tea)
- 1/2 teaspoon fine sea salt
- 2 green onions, sliced
- 1/4 cup toasted slivered almonds
Method
Place rice in a dry saucepan over medium heat.
Toast rice until fragrant and lightly golden in color, stirring often, 3 to 5 minutes.
Meanwhile, bring 2 cups of water to a boil.
Remove from heat and set aside to cool for 2 minutes, then add tea and brew for 1 minute.
Strain tea.
Add the hot tea to rice in the saucepan.
Add salt, bring to a boil, reduce heat to a simmer and cover.
Cook until the liquid is absoorbed, about 20 minutes.
Allow rice to rest for a few minutes.
Fluff with a fork and serve garnished with green onions and almonds.
