We call this Kermit's Dip because of its bright green color, which comes from the addition of avocado. Serve tortilla chips, cucumber slices or cherry tomatoes along with this creamy dip.
- 1 ripe avocado
- 1/2 cup plain yogurt
- 2 teaspoons lemon juice or vinegar
- 1/2 teaspoon ground cumin or Mexican oregano
- 1/2 teaspoon hot sauce
Cut avocado in half, remove pit, spoon out pulp from skin and place in a medium bowl.
Add yogurt, juice, spice and hot sauce. Mash avocado mixture with a fork or potato masher.
Cover with plastic wrap and refrigerate for 1 hour to allow flavors to meld.
Per serving: (2 tablespoons), 40 calories (30 from fat), 3.5g total fat, 0.5g saturated fat, 0mg cholesterol, 15mg sodium, 3g carbohydrates (1g dietary fiber, 1g sugar), 1g protein.
