Kielbasa-Apple Kabobs

Kielbasa are fully cooked smoked sausages traditionally made of pork, but also available made with beef, turkey or chicken. Paired with sweet apples and tangy onions, they make terrific, easy-to-prepare kabobs. The cooking time is short for these as the sausage is already cooked.

Ingredients
- 1 pound cooked kielbasa sausage, sliced into 2-inch pieces
- 1 large yellow onion, cut into 1-inch chunks
- 1 red apple, such as Braeburn or Gala apples, cut into 2-inch pieces
- 1 tart green apple, such as Granny Smith, cut into 2-inch pieces
- 1/4 cup lemon juice
- 1/4 cup extra-virgin olive oil
- 2 teaspoons ground black pepper
- 1/2 teaspoon kosher salt
Method
Place sausage, onion and apples in a large bowl.
Add lemon juice, oil, pepper and salt. Toss to combine.
Prepare a grill for medium-high heat cooking.
Thread pieces of sausage, onion and apple on skewers, alternating them. (If using wooden skewers, soak in water 30 minutes before assembling.)
Grill kabobs until apples and onions are golden brown on edges, but still crisp inside, and sausage is very hot, 3 to 5 minutes on each side. Serve immediately.
