Kiwifruit Coconut Ice Pops
- 4 golden kiwifruit
- 2 bananas, peeled
- 1 cup unsweetened coconutmilk
- 1/2 cup unsweetened almondmilk
- 4 large strawberries, hulled, sliced in half lengthwise
- 1/2 cup blueberries
- Unsweetened coconut flakes, for garnish (optional)
Cut 1 kiwifruit crosswise into ¼-inch thick slices and the remaining kiwifruit into 1-inch cubes.
Cut bananas into 1-inch cubes.
Place cubed kiwifruit, bananas, coconutmilk and almondmilk into blender or food processor and blend until smooth.
Pour into ice pop molds and freeze the pops until partially frozen (about two hours), then place the sliced kiwi, strawberries and blueberries in the molds. Return them to the freezer for another three hours or until completely frozen.
When ready to serve, remove from ice pop molds and sprinkle with coconut flakes, if desired.
Note: Freezing times vary depending on the effectiveness of your freezer, your pop base and the type of mold you're using. For the best results, place the molds toward the back of the freezer where it's coldest.
