Lamb Patties with Mint and Rosemary
Serves 4 to 6

While these patties are delicious on their own, dress them up as burgers, if you like, using whole wheat buns, sliced tomatoes and crisp lettuce leaves.

Ingredients
- 1/2 small yellow onion, chopped
- 1/3 cup panko (Japanese bread crumbs)
- 3 tablespoons finely chopped fresh mint
- 2 tablespoons finely chopped fresh rosemary
- 2 cloves garlic, finely chopped, divided
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- 1 1/2 pound ground lamb
Method
In a medium bowl combine onion, panko, mint, rosemary, garlic, salt, and pepper.
Add lamb and, with your hands, bring the ingredients together, being careful not to overwork the meat.
Form the mixture into 4 patties (or 6 smaller patties, if desired.)
Place on a foil-lined baking sheet, cover loosely with plastic wrap and refrigerate for 30 minutes.
Meanwhile, prepare the grill for medium heat cooking or preheat the broiler.
Cook patties for 5 to 6 minutes per side, or until just still pink inside.
