Lamb Sliders with Celery-Yogurt Sauce

Handheld Nordic-inspired burgers offer an easy and fun introduction to lamb. These sliders are topped with skyr, a tangy Icelandic dairy product with a thick consistency like strained yogurt, and a sprinkling of celery leaves.

Ingredients
  • 1 pound ground lamb
  • 1/4 teaspoon ground black pepper
  • 3/4 teaspoon fine sea salt divided
  • 2 tablespoons extra-virgin olive oil
  • 1 (5.3-ounce) container plain skyr or 1/2 cup plus 1 tablespoon nonfat plain Greek yogurt
  • 1/3 cup thinly sliced celery (from about 1 stalk)
  • 2 tablespoons chopped fresh chives
  • 8 small soft whole grain buns, toasted
  • 1/4 cup celery leaves (from about 1 bunch)
Method

In a medium bowl, mix lamb with pepper and 1/2 teaspoon of the salt. Form into 8 small patties each about 3-inches across. In a large skillet, heat oil over medium-high heat until hot. Add patties and cook until cooked to your desired doneness, 3 to 4 minutes per side for medium.

Meanwhile, in a small bowl, combine skyr, sliced celery, chives and remaining 1/4 teaspoon salt. Serve burgers on toasted buns topped with skyr mixture and celery leaves.
