Madeira-Glazed Chestnuts

These glazed chestnuts are a luxurious yet simple side for the holiday table. The sweetness of the Madeira provides an irresistible aroma to the rich chestnuts. Serve alongside roasted turkey, duck or ham. The Madeira takes time to reduce, so set it on the stove and keep an eye on it while you prepare other parts of the feast.

Ingredients
- 1 (750.0-ml) bottle Madeira wine
- 1 (14.8-ounce) jar whole roasted peeled chestnuts
- 2 tablespoons unsalted butter cut into 4 pieces
Method
Bring wine to a simmer in a saucepan over medium heat. Continue simmering until wine is reduced to 3/4 cup, about 45 minutes. The reduced wine will be syrupy with a caramel color. Set aside.
When ready to serve, place chestnuts in a pan and pour Madeira reduction over them. Heat over medium to low heat, just until chestnuts are warmed through. Be careful not to stir chestnuts too much as they will crumble into small pieces. Remove from the heat, add butter and gently stir to melt butter. Serve immediately.
