Malawi-Style Corn Patties

These dense corn cakes are inspired by a traditional dish from Malawi called nsima. Serve with a hearty soup or stew. Inspired by Whole Planet Foundation® microcredit client recipes.

  • 1 cup finely ground yellow cornmeal, divided
  • 3/4 teaspoon coarse sea salt

Method

Place 1/2 cup cornmeal in a medium saucepot and cook over medium-high heat about 5 minutes or until lightly toasted, stirring occasionally.

Slowly add 2 cups water and salt and bring to a boil, stirring occasionally.

Reduce heat to medium and gradually add remaining 1/2 cup cornmeal while stirring constantly and vigorously until mixture is very thick and dense, about 10 minutes.

Remove from heat and use a clean spoon to scoop out 4 patties.
