Mango-Cucumber Salsa

Try this fresh, lightly sweet salsa as a topping for grilled or broiled fish, chicken or tofu. We recommend leaving the seeds in the jalapeño for more kick, but you can remove them before chopping the pepper for milder flavor.
Ingredients
  • 1 mango, finely diced
  • 1/2 cucumber, seeded and finely diced (about 3/4 cup)
  • Zest and juice of 1/2 lime, or to taste
  • 1/3 cup chopped fresh cilantro
  • 1/4 small red onion, diced
  • 1 jalapeño pepper, finely chopped

Method

In a medium bowl, combine mango, cucumber, lime zest, lime juice, cilantro, onion and jalapeno.

Toss to combine.
