Mango Oatmeal Poppers

For a morning treat or just a snack, try these baked oatmeal cakes packed with fresh mango, tangy yogurt and cashews.

Ingredients

    1 cupunsweetened plain almondmilk
    1/2 cupnonfat plain Greek yogurt
    1/4 cuppure maple syrup
    2 teaspoonspure vanilla extract
    1/2 teaspoonfine sea salt
    2eggs
    2 cupsrolled oats
    1 cuptoasted cashews, chopped
    2 teaspoonsbaking powder
    2ripe mangoes, finely chopped (about 2 cups)
    Canola spray oil

Method

Preheat the oven to 350°F. Lightly coat a mini muffin pan with spray oil.


In a large bowl, whisk together almondmilk, yogurt, syrup, vanilla, salt and eggs until well combined. 


Stir in oats, cashews, baking powder and mangoes. Let sit for 10 minutes to thicken.


Spoon batter into the prepared pan, filling each cup about three-fourths full. (Work in batches, if needed.) 


Bake until just firm and golden brown around the edges, about 25 minutes. 


Let cool until warm, then loosen edges with a paring knife and serve. (Alternatively, bake batter in an oiled 9-inch pie plate until just firm and golden brown, 35 to 40 minutes; cut into wedges.)
