Maple and Orange Glazed Carrots
Serves 4 to 6

Sweet maple syrup, infused with a hint of orange zest and nutmeg, lightly coats steamed carrots for an utterly delicious side dish.

Ingredients
- 12 medium carrots
- 2 tablespoons unsalted butter
- 1 tablespoon maple syrup
- 2 tablespoons orange juice
- Zest of 1 small orange
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black or white pepper, to taste
- grated nutmeg
Method
Peel carrots and then slice into 1/4-inch pieces.
Place carrots in vegetable steamer, covered, over boiling water for about 10 minutes, or until tender but not mushy.
Remove from heat and set aside.
In a large saucepan, melt butter.
Add maple syrup, orange juice, orange zest, steamed carrots, salt, pepper and nutmeg.
Stir to coat carrots and cook until heated through.
