Maple-Glazed Carrots

This same glaze is just right on cubes of roasted sweet potato or acorn squash, too.

Ingredients
- 1 (16.0-ounce) bag baby carrots (about 3 1/2 cups)
- 1 tablespoon canola oil or melted unsalted butter
- 2 teaspoons pure maple syrup
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- grated nutmeg
- ground cinnamon
Method
Steam carrots over boiling water until just tender, about 5 to 10 minutes. Set aside.
Add the oil and syrup to a medium skillet and heat over medium-high heat. Add the carrots and cook until the carrots are heated through and beginning to lightly brown, about 5 minutes. Remove from the heat and stir in nutmeg and cinnamon.
