Mashed Potatoes with Garlic

Ingredients

    2 poundsYukon gold or red potatoes, cut into 1½-inch chunks
    4garlic cloves
    4sprigs thyme
    1bay leaf
    1 cupmilk or half-and-half, warmed
    1/4 cupextra-virgin olive oil
    1/2 teaspoonfine sea salt
    1 tablespoonchopped fresh parsley and/or chives

Method

In a large saucepan, cover potatoes, garlic cloves, thyme and bay leaf with salted water and simmer over medium heat until fork-tender, about 20 minutes. 


Drain thoroughly and return to pan, discarding thyme sprigs and bay leaf. 


Set the pan over medium heat and add milk and olive oil. 


Mash with an old-fashioned potato masher or large fork. 


Season with salt. Transfer to a serving dish and garnish with parsley.
