Mediterranean Chicken Caesar Salad

This chicken salad is inspired by the flavors of the Mediterranean. Marinating the chicken makes it moist and delicious. For a twist, try serving in lettuce cups for a hand-held salad.

Ingredients

    2boneless skinless chicken breasts
    4 tablespoonsextra-virgin olive oil
    2 tablespoonsMediterranean rotisserie seasoning
    1/2red or green bell pepper
    4 cupswashed and torn Romaine lettuce
    Organic Caesar dressing
    1 cupcroutons
    1/4 cupgrated or shaved Parmesan cheese
    2 tablespoonskalamata olives

Method

Four to 12 hours before cooking, marinate chicken breasts with olive oil and seasoning.


At mealtime, preheat broiler or grill and cook chicken and bell pepper 10-15 minutes, until chicken is done.


Meanwhile, toss lettuce with dressing and divide onto 4 plates.


Top with croutons, Parmesan and olives.


Slice cooked chicken and pepper into strips.


Arrange on salads and serve.
