Mini Ham and Cheese Quiches

These quick and easy quiches are perfect to eat with a green salad and a handful of fresh fruit for lunch. Use chopped turkey breast instead of ham, if you like.

- 2 pre-rolled pie crust
- 8 eggs
- 2/3 cup low-fat (1%) milk
- 1 cup shredded cheese, like Cheddar cheese or goat gouda
- 1 cup ham, chopped
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
Method
Preheat oven to 375°F.
Use a round cutter (about 3 1/2-inch) to cut out 12 circles from the pie crust.
Place circles in the cups of a muffin tin.
Chill crust in tin while you prepare filling.
In a small bowl beat together the eggs, milk, cheese, ham, black pepper and cayenne.
Fill the prepared muffin tins, season and bake until puffed and lightly brown, 20 to 25 minutes. Let cool slightly and remove from tins.
