Minted Yogurt with Fresh Fruit

Juicy oranges and sweet honeydew melon are combined with sliced almonds and goat’s milk yogurt in this simple Moroccan-inspired treat. Light and refreshing, this is a cool, soothing way to cap off a spicy meal. If desired, use yogurt made with cow’s milk or soymilk instead of goat’s milk.

Ingredients
- 4 oranges
- 1 small honeydew melon, halved and seeded, fruit removed with a melon baller
- 3 (6.0-ounce) containers plain goat's milk yogurt
- 3 tablespoons thinly sliced fresh mint, plus sprigs for garnish
- 1 tablespoon honey
- 1/4 cup sliced almonds, toasted
Method
Cut thin slices off top and bottom of an orange and set on a cutting board.
Slice down along the curve of the fruit, removing all skin and white pith, and cutting all the way to the flesh.
Working over a large bowl, cut along each side of the membranes to release the sections, allowing them to fall into the bowl along with any juice. Repeat with remaining oranges.
Add melon to the bowl and stir to combine.
In a medium bowl, stir together yogurt and sliced mint.
Divide yogurt mixture between 6 serving bowls.
Spoon fruit on top of yogurt and drizzle with honey.
Sprinkle with almonds and garnish with mint sprigs.
