Monkfish, Sausage and Apple Stovetop Casserole

Ingredients

    3 (8-ounce)fresh monkfish fillets
    1 package (12-ounce)cooked sausage, such as apple gouda
    1 (16-ounce)bag cole slaw mix
    2gala apples, sliced
    2 cupsseafood broth
    1 tablespooncaraway seeds
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Cut each monkfish fillet into 5 pieces; set aside. 


Thinly slice sausage; mix with slaw and apples in large bowl. 


Spread into stovetop casserole, Dutch oven or large skillet. 


Add broth and cook over medium heat 15 minutes; stir occasionally. 


Add fish, sprinkle with caraway seeds, season with salt and pepper; cover and cook additional 8 to 10 minutes, or until fish flakes easily with fork.
